Ingredients

1 1/4 cup vegetable broth
1 cup couscous
2 TBSP lemon juice
3 TBSP olive oil
salt and pepper to taste
bunch of mint chopped
2 tomatoes - one tomato diced and the other sliced for garnish
1 cucumber diced
few lettuce leaves for garnish


In pot bring broth, couscous, lemon juice, oil, salt and pepper to boil stirring gradually then remove from heat and let stand for 5 minutes.


If still has liquid then drain.


Stir and fluff.


Add mint, diced tomato and cucumber and stir then fluff.


Garnish with tomato and parsley.
