Cowboy Caviar (these are not fish eggs!)

Serves 8-10 | Prep Time 5-10 | Cook Time

Ingredients

15 oz can black-eyed peas, drained
11 oz can shoe peg/white corn, drained
2 Roma tomatoes seeded and chopped
2-3 green onions, chopped
2 avocados, chopped

Dressing:
1/2 cup olive oil
1/4 cup sugar
1/2 cup red wine vinegar
1 tsp salt
1 tsp pepper


Mix the first five ingredients together. Make the dressing and pour over the vegetable mixture. Enjoy with Tostito scoops or other chips!
