Why I Love This Recipe
this is one of my favorite from: The 3 Fat Chicks on a Diet website. It's great as a snack, appetizer, side dish, salsa etc.
I make double for potlucks and it gets RAVE reviews!
Ingredients You'll Need
5 Roma tomatoes, chopped
1 can (15 ounces) corn, drained
1 can (15 ounces) black-eyed peas, drained
1 can (15 ounces) kidney beans, drained
1 can (15 ounces) cannellini or Great Northern beans, drained
1 can (7 ounces) diced green chiles
6 green onions, sliced
Juice of 2 or 3 limes
1/2 teaspoon garlic salt
1 teaspoon chili powder
1/2 teaspoon cumin
Lime slices for garnish
Combine tomatoes, corn, peas, beans, chiles and onions in a large bowl.
Mix seasonings with lime juice in a small bowl or jar and pour over the bean mixture.
Serve garnished with lime slices.
Makes about 32 servings of a quarter-cup each.
