Ingredients

Black beans
Black Eyed Peas
Onion
Corn
Dice Tomatoes
Cucumbers
Jicama
Orange/yellow/red/ green peppers
Jalapeno - or as spicy as you toleate
Avocado
One bunch of Cilantro
Few Limes, for juice
Cumin
Salt n Pepper


Now this recipe, obviously, can be modified and seasonal depending on fresh ingredients, and you make as little or as much as needed and with which ingredients you have fresh and available...basically a salsa, all diced to small sizes...start with a large mixing bowl, add drained black beans (canned is fine, but prep fresh if ya want), drained black eyed peas (same, canned is fine) corn (I prefer Shoenpeg White, but you could cut fresh off the cob too) , and diced sweet onions (Vidialia or shallots)...cover this in olive oil and spice with Cumin. Add any peppers or other veggies you chose and mix well...Save the cilantro, Avocado, and Fresh squeezed lime juice as the last ingredients to mix in. Add 2 or 3 cap fuls of cider rice vinegar (they offer a variety, some come spiced) more olive oil and salt and pepper to taste. Mix well, store overnight (if possible), fresh mix in the mornin will be tasty!

My mother taught me this recipe. It's a favorite at gatherings, parties, or camping food. It is very versatile...can top chicken or swordfish for a hearty meal. Serve it fresh as a dip / salsa, add to tacos / burritos, hot dogs / burgers / sandwiches, Eggs / omelettes / quiches...pretty much anything! Best to prep the day before, and store in tight tupperware for easy storing in the fridge. This is an addicting party pleaser for sure!
