Ingredients

6 TSP. MARGARINE
3 TBSP. FLOUR
1/4 TSP. SALT
4 1/2 CUPS MILK
6 BEATEN EGG YOLKS
2 1/2 CUP FRESH OR FROZEN CRAB
3 TBSP. DRY SHERRY
DASH OF WHITE PEPPER
1 TSP. FRESH LEMON JUICE
1 DROP LIQUID HOT SAUCE
6 ENGLISH MUFFINS, SPLIT AND TOASTED
CHOPPED CHIVES FOR GARLIC
SERVES 12


IN MEDIUM SKILLET MELT THE MARGARINE, WHISK IN THE FLOUR AND SALT. COOK AND WHISK FOR 2 MINUTES. REMOVE FROM HEAT AND WHISK IN MILK SLOWLY. PUT BACK ON BURNER WHISKING ALL WHT WHILE. COOK FOR 4 TO 5 MINUTES . UNTIL THICKENED AND BUBBLEY. WHISKING ALL THE WHILE. STIR IN CRAB , DRY SHERRY, LEMON JUICE, HOT PEPPER SAUCE AND WHITE PEPPER. HEAT THROUGHLY. SPOON OVER TOP OF TOASTED MUFFINS. SPRINKLE WITH CHIVES. SERVES 12 ENJOY YOU MAY TRY SHRIMP OR IMITATION CRAB MEAT.
