Crabbed Stuffed Anaheim Chilis

Why I Love This Recipe


Ingredients You'll Need

2 tablespoons olive oil
2 shallots
½ cup corn kernels
17 ounces crab meat
½ cup crumbled goat cheese
½ tsp salt


Directions

Bake Anaheim chilies in a 300* oven 10 minutes until they start to blacken. Immediately put chilies in a paper bag when you remove them from the oven. This will help steam them. After ten minutes of steaming, pull out the chilies. The skin should peel right off. Peel off skin, and slice a line down one side of each chili. Pull out the seeds and pulp. Put the chilies aside


In a large pan, boil there corn. For eight minutes. When the corn is cool enough to handle, scrap the kernels off. In a medium saucepan pour olive oil. Add shallots and corn. Sauté 3 minutes. Add the crab meat. Cook until warm. Transfer to a large bowl. Fold in goat cheese and salt. Stuff the chilies with the crab mixture. Bake in a 350* oven for 6 minutes, until warm.
