CRANBERRY ALMOND BANANA BREAD
- 3 over ripe bananas
- 1 cup sugar
- 1/2 cup oil
- 1 egg
- Beat all ingredients together. Stir in:
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/2 c. flour
- 1/2 c. chopped nuts (for traditional bread, use walnuts)
For additional flavor I subbed almonds for the walnuts and tossed in 1/2 cup dried cranberries and 1 tsp cinnamon. You can also use Splenda in place of the sugar and it works well!
Bake at 350 for 45 minutes or until knife comes out clean.
