CRANBERRY ALMOND BANANA BREAD

Ingredients

  • 3 over ripe bananas
  • 1 cup sugar
  • 1/2 cup oil
  • 1 egg
  • Beat all ingredients together. Stir in:
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 c. flour
  • 1/2 c. chopped nuts (for traditional bread, use walnuts)

Directions

  • For additional flavor I subbed almonds for the walnuts and tossed in 1/2 cup dried cranberries and 1 tsp cinnamon. You can also use Splenda in place of the sugar and it works well!
  • Bake at 350 for 45 minutes or until knife comes out clean.

Notes

This is my mother's famous banana bread recipe with a few additions. It is the most moist and soft banana bread recipe I've ever used!
