Cranberry Bread Grandmas version
3 eggs, beaten
1 can whole berry cranberry sauce
1 box spice cake mix
2 teaspoons freshly grated orange rind
1/2 can of White Chocolate Almond cake icing, optional
Place eggs in mixing bowl and add cranberry sauce. Mix well. Add dry cake mix and orange rind. Mix on low speed until moistened. Beat 3 minutes on medium speed. Pour into 2 Pam sprayed 8x4x4 inch loaf pans. Bake at 350° until it springs back when touched lightly with a finger, about 50 to 60 minutes. Cool in pan for 10 minutes.
