CRAWFISH AU' GRATIN

Ingredients

  • 1 lb. crawfish tails
  • 1 pint whipping cream
  • 1 cup cheddar cheese
  • 1/2 cup mozzarella cheese
  • 2 green onions, chopped
  • 2 tbsp. parsley, chopped
  • 5 tbsp. butter
  • 4 tbsp[. flour
  • 2 tbsp. white wine
  • 1 tsp. Lea & Perrin
  • 1/2 tsp. La. Ready Hot
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper

Directions

  • Melt butter in skillet.
  • Add green onions & simmer for 2
  • minutes. Add flour & simmer
  • 2 minutes. Heat cream & add to
  • flour mixture. Simmer 6
  • ]minutes. Add crawfish &
  • remainder of ingredients,
  • except mozzarella. pour into
  • buttered baking dish & sprinkle
  • with mozzarella. Bake @ 350
  • degrees. for 25 minutes
