FOR FULL SIZE PIE SHELL: Double amounts of crawfish tails, butter, flour, and cream. Increase amounts of other ingredients according to your personal taste.
½ lb crawfish tails
½ stick margarine
2 tbl flour
1 medium onion, chopped
2 tbl bell pepper, chopped
½ cup Half & Half cream
2 tbl chopped fresh parsley
1/8 tsp powdered thyme
Salt and pepper crawfish tails (if properly boiled, skip this step).
Chop slightly in food processor and set aside. Melt butter; add flour and cook 5 minutes.
Add onions; cook until transparent.
Add bell peppers; cook until tender.
Add crawfish tails, cream, green onions, parsley and thyme; cook 15 minutes.
Fill miniature pie shells and bake at 350 degrees for 15 minutes.
Bake until dough is cooked.
