Cream Cheese Frosting
2 ounces cream cheese
2 tablespoons butter
1 1/4 cup confectioner’s sugar (or slightly more depending on consistency)
Mix the cream cheese and butter in the bowl of an electric mixer. Mix on low speed until combined.
Add the confectioners’ sugar and mix on medium until desired consistency. (about 1 minute) If consistency is not as desired, add more confectioners sugar in small amounts until reached.
Frost immediately and store cupcakes in the refrigerator until ready to eat, and then set out for about 15 minutes before serving.
