CREAM CHEESE AND PUMPKIN SNACK CAKES

Ingredients

  • 15-oz. can pumpkin
  • 1 c. sugar
  • 1 c. brown sugar, packed
  • 1/2 c. butter, melted
  • 4 eggs
  • 2 t. vanilla extract
  • 1-1/2 c. all-purpose flour
  • 2-1/2 t. pumpkin pie spice
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1/4 t. salt
  • 1 c. raisins
  • 1/2 c. chopped walnuts
  • 16-oz. can cream cheese frosting

Directions

  • Blend pumpkin, sugars, butter, eggs and vanilla in a large bowl with an electric mixer on medium speed.
  • Combine dry ingredients in a small bowl; stir into pumpkin mixture. Add raisins and nuts.
  • Pour into a greased 13"x9" baking pan.
  • Bake at 350 degrees for 35 to 40 minutes, until a toothpick tests clean.
  • Cool.
  • Frost; let stand until set. Cut into squares.
