Creamed Spinach With Collard Greens
During the big Spinach Scare of '06, I made creamed spinach with collard greens. It was really good. It gives a different flavor and texture to this wonderful comfort food.

PrintINGREDIENTS
- 1 bunch spinach
- 1 bunch collard greens
- 1 cup milk
- 1 large onion
- 1 handful of pine nuts
- dash cinnamon
- dash nutmeg (very important)
- dash sage
- 2 tablespoons flour
- 1 tablespoon olive oil
DIRECTIONS
Cook onions, spices and pine nuts in the olive oil until onion is clear. Combine milk and flour until it comes to a boil. Add collard greens until soft. Then toss in the remaining spinach until tender.
