Creamy Dreamy Scrambled Eggs

Serves 1 | Prep Time 5 minutes | Cook Time 5 minutes

Ingredients

2 eggs
1/4 of an avocado, chopped
1 tsp blue cheese or gorgonzola
1/4 cup chopped vegetables of your choice (I like mushrooms and spinach)
cracked garlic salt and pepper to taste


Place nonstick skillet over medium heat and spay with cooking spray. Sautee chopped vegetables of your choice until soft and fragrant. Set aside. Whisk eggs in a small bowl; add avocado, cheese, and sauteed veggies to the eggs, and pour onto hot skillet. Scrape the skillet often until desired scrambled-ness is desired. Grind garlic salt and pepper on top of eggs and enjoy!
