Creamy Ham Casserole
4 1/2 cups uncooked medium egg noodles
2 cups broccoli florets
1 cup fat free milk
1 can condensed reduced-fat cream of mushroom soup
2 cups shredded reduded fat cheddar cheese, divided
1 (6 oz) tub light cream cheese, (herb & garlic or onion & chive)
2 cups chopped lean ham
1 cup chopped carrot
1 cup herb flavoured croutons, crushed
Preheat oven to 350.
Cook noodles in boiling water for 2 mins. Add broccoli and cook an additional 3 mins. Drain.
Combine milk, soup, 1 cup cheddar cheese, and cream cheese in large bowl. Mix well with whisk. Add noodle mixture, hamm and carrot and stir. Divide noodle mixture evenly between 2 (8 inch) baking dishes coated with cooking spray.
Combine remaining cup of cheese and crouton crumbs, toss well. Sprinkle over each casserole. Bake for 30 mins or until heated through.
