Creamy Rice, Chicken and Spinach Dinner
1/4 cup Kraft Roasted Red Pepper Italian w/ Parmesan dressing
1 lb. boneless skinless chicken breasts, cut into strips
1 1/2 cups fat-free chicken broth
2 cups Minute brown rice, uncooked
4 oz. 1/3 less fat cream cheese
8oz. baby spinach
1 tomato chopped (about 1 cup)
2 tbsp. grated parmesan cheese
Heat dressing in a large skillet on medium-high heat.
Add chicken; cook 3 min.
Add broth; bring to a boil.
Stir in rice; return to boil.
Reduce heat to medium; simmer 5 min.
Stir cream cheese into rice mixture until melted.
Add spinach and cover. cook 1 min. or until spinach is wilted.
Stir rice mixture to mix in spinach.
Remove from heat; let stand 5 min.
Stir in tomatoes and sprinkle with paremesan cheese.
*i was never able to find that specific type of Italian dressing so i tried a different kind. any variety of Italian will work!
