Creamy Tomato Soup

Ingredients

2 Tbs. olive oil
1 medium yellow onion, chopped
2 (28 oz. cans crushed tomatoes)
10 cups tomato juice
1 head of roasted garlic
2 1/2 cups heavy cream
1 1/4 cups butter
salt and pepper


Saute onion in olive oil until tender. Add tomatoes and juice and simmer for 30 to 45 minutes. Add garlic and puree with stick blender. Stir in heavy cream and butter. Salt and pepper to taste. Yummo! Serve with lots of crusty bread for dipping.
