CREATE YOUR OWN CASSEROLE

Ingredients

  • Choose one of the following Soups, undiluted:
  • 1 cn (10 3/4-oz) cream of mushroom soup
  • 1 cn (10 3/4-oz) cream of celery soup
  • 1 cn (10 3/4-oz) cream of chicken soup
  • 1 cn (10 3/4-oz) cheddar cheese soup
  • Choose one of the following veggies:
  • 2 cn (14 1/2-oz) diced tomatoes with basil, garlic, and oregano, undrained
  • 1 cn (14 1/2-oz) cut green italian beans, drained
  • 1 cn (15 1/4-oz) sweet peas, drained
  • 1 cn (10 1/2-oz) asparagus cuts and tips, drained
  • 1 cn (15 1/4-oz) whole kernel corn, drained
  • 1 cn (13 1/2-oz) chopped spinach
  • Choose one of the following Pastas/Rice/Dried Potatoes:
  • 2 c Uncooked elbow macaroni
  • 1 c Uncooked regular rice
  • 4 c Uncooked wide egg noodles
  • 3 c Uncooked small pasta shells
  • 1 1/2 c Dried Potatoes, your choice
  • 1 box Stuffing Mix
  • Choose one Meat/Fish/Poultry:
  • 2 cn (6-oz) solid white tuna in spring water, drained and flaked
  • 2 c Chopped cooked chicken
  • 2 c Chopped cooked ham
  • 2 c Chopped cooked turkey
  • 1 lb Ground beef, browned and drained
  • 1 cn Corned beef
  • Choose one or more extras as Mix-Ins (optional):
  • 1 cn (3-oz) sliced mushrooms, drained
  • 1/4 c Sliced ripe olives, drained
  • 1/4 c Chopped red or green bell pepper
  • 1/4 c Chopped onion
  • 1/4 c Chopped celery
  • 2 Garlic cloves, minced
  • 1 cn (4.5-oz) chopped green chiles
  • 1 cn (1 1/4-oz) envelope taco seasoning mix
  • Toppers:
  • 1/2 c (2-oz) shredded mozzarella cheese
  • 1/2 c Grated parmesan cheese
  • 1/2 c (2-oz) shredded swiss cheese
  • 1/2 c shredded cheddar cheese (mild sharp, xtra sharp, your choice)
  • 1/2 c Fine, dry breadcrumbs/crackercrumbs
  • 1 c Round buttery crackers, crushed
  • 1 c Herb-seasoned stuffing mix
  • 1 c Fried Chow-Mein Noodles
  • 1 c Fried Onions
  • 1 c dried Salad Toppers (McCormick's OR make your own)
  • Basic sauce:
  • 1 (8-oz) container sour cream OR yogurt*
  • 1 cup milk*
  • 1 cup water
  • 1 teaspoon salt (less to taste)
  • 1 teaspoon pepper (less to taste)
  • 1 can Cream of Soup, undiluted (OR make your own

Directions

  • Combine and mix well.
  • *Note: omit sour cream and milk when using tomatoes.
  • Stir in one of each of Veggies, Pasta/Rice/Dried Potatoes, Meat/Fish/Poultry, and, if desired, one of the Mix-Ins.
  • Spoon into a lightly greased 13- x 9-inch baking dish. Bake, covered, at 350F for 1 hour and 10 minutes. Uncover and sprinkle with one of the Toppers; bake 10 more minutes.
