Crema de Mango - A delicious Mango dessert
4 pounds (about 5) ripe mangoes
3 tablespoons fresh lime juice
11/2 cup heavy cream, whipped
1 cup diced pecans
2 large oranges, peeled, seeded and diced
4 (or more) tablespoons sugar
Garnishes: Maraschino cherries and fresh mint leaves
Peel, seed and pur'e mangoes with lime juice in a food processor. Transfer mango pur'e to a large bowl, fold in the whipped cream, pecans and orange pieces. Weeten to taste with sugar. Spoon into dessert bowls. Chill thoroughly. Serve decorated with maraschino cherries and fresh mint leaves. Yield 12 servings.
