Creme Brulee Cheesecake
1-1/2 cups graham cracker crumbs
3 tablespoons sugar
1/3 cup butter, melted
2 pkgs. (8 oz. each) cream cheese, softened
3/4 cup sugar
1-1/2 teaspoons vanilla
1 egg yolk
1/2 cup brown sugar
1 tablespoon water
Crust: Mix crumbs, sugar and butter and press firmly into a 9-inch springform pan.
Filling: Mix Cream cheese, sugar and vanilla on medium until well blended. Add eggs and yolk one at a time mixing well after each addition. Pour into prepared crust. Bake at 350ºF for 40 minutes. Run knife around sides of pan. Cool on baking rack until no longer warm on bottom. Refrigerate uncovered for 3 hours or overnight. (do not remove sides of pan yet). Before serving, prepare topping as directed below:
Topping: Mix sugar and water. Spread on top of cheesecake. Place on cookie sheet and broil 4-6 inches from heat for 1 to 1-1/2 minutes or until topping is bubbly. Remove sides of pan and serve.
