Creme De Menthe Cheesecake
1 pkg. (9 oz.) chocolate wafer cookies, crushed - about 2 cups
1/3 cup butter or margarine, melted
5 pkg. (8 oz. each) cream cheese, softened
1-1/2 cups sugar
3 large eggs
1 carton (16 oz.) sour cream
1/4 cup white creme de cacao
1/4 cup green creme de menthe
2-1/2 teaspoons vanilla extract
1/2 cup whipping cream, whipped, for garnish
chocolate covered mint wafers, for garnish
candy shavings; for garnish
Chocolate Crust: Combine chocolate wafer crumbs and butter; firmly press mixture evenly onto bottom and 1-inch up sides of a 10-inch springform pan. Bake at 350º for 8 minutes.
Beat cream cheese at medium speed of an electric mixer until creamy; gradually add sugar, beating well. Add eggs, one at a time, beating after each addition. Stir in sour cream and next 3 ingredients. Pour mixture into Chocolate Crust.
Bake at 350ºF for 40 minutes. Turn oven off, leaving cheesecake in oven with oven door closed 30 minutes. Open oven door; leave cheesecake in oven an additional 30 minute. Remove from oven, and run a knife around edge of cheesecake. Cool completely on a wire rack. Cover and refrigerate at least 8 hours. Pipe whipped cream around outer edge of cheesecake, and garnish, if desired.
