CREOLE CHICKEN

Ingredients

  • 1-1/2 pounds frying chicken, skin removed, cut up
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped green pepper
  • 1/2 cup tomato sauce
  • 1 cup fat-free chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 3 tablespoons flour
  • 1 teaspoon lemon juice
  • 1/2 teaspoon horseradish
  • 1/2 cup sliced fresh mushrooms
  • 1/2 cup pimentos

Directions

  • Preheat oven to 375 degrees. Place chicken in a baking dish or casserole and cover; bake
  • 45 minutes. In a skillet, combine onion, peppers, tomato sauce, broth, salt, and paprika.
  • Cook over medium heat until onions and peppers are tender. Stir in flour to thicken. Add
  • remaining ingredients and chicken pieces. Simmer 5 minutes; season with salt if
  • necessary.
