Creole Flank (Colombian)
2 pounds thick or thin beef flank (sobrebarriga).
1/2 pound of tomatoes
5 tablespoons oil
3 stalks green onions
1 large white onion
1 clove garlic
1 or 2 tablespoons tomato sauce
Salt to taste
1 teaspoon of dye (achiote) - optional
Wash the meat well and cook it in a pressure cooker with water to cover the flank steak for 30 minutes and add salt to taste.
After 30 minutes take it out and cut it in pieces.
In a separate pan fry the finely chopped white onion, tomato, garlic and scallions, add salt and oil and simmer until it becomes a soft and homogeneous mixture.
Add the tomato sauce, dye and the meat pieces.
Simmer for 5-10 minutes.
