Crisp Chocolate Chip Shortbread
3/4 c. Land 'O Lakes butter, softened
3/4 c. powdered sugar
1/2 tsp. vanilla
1/4 tsp. almond extract
1 1/3 c. flour
3 Tb. cornstarch
1/8 tsp. salt
1/2 c. mini semi-sweet chocolate chips
3 Tb. lrg. grain sugar or sugar
Heat oven to 350º. Combine butter, powdered sugar, vanilla and almond extract in lrg. bowl. Beat at med. speed, scraping bowl often, 'til creamy. Reduce speed to low; add flour, cornstarch and salt. Beat 'til well mixed. Stir in chocolate chips by hand.
Pat dough into ungreased 15≈10≈1" jelly-roll pan. Sprinkle with large grain sugar. Bake for 15-20 min. or 'til edges are lightly browned. Immediately cut into squares, rectangles or triangles while still warm. Remove from pan when cool.
