Crispy Blue Cheese Potatoes
1 lb. red potatoes, cut into wedges
1 Tbsp olive oil
1/8 tsp. salt
1/8 tsp black pepper
1/4 cup blue cheese
8 oz. bacon - crisply cooked, chopped
1/2 cup shredded cheddar cheese
Toss potato wedges with olive oil.
Season with salt and pepper and place in baking dish.
Bake at 400F for about 30 minutes until tender.
Mix blue cheese, bacon and cheddar cheese; sprinkle over potatoes.
Bake until cheese are melted.
You can also serve with sour cream.
