I just came back from a week cruise in the Mexican Riviera and ran in to the nicest women at a wine pairing dinner we went to. She was kind enough to share this recipe with me. Thank you, Debbi!


  • 1 cup melted butter
  • 1 cup coconut
  • 3 cups Rice Krispies
  • 1 cup walnuts (chopped)
  • 1 teaspoon vanilla
  • Toast this all together in a 350 degree oven for aobut 1/2 hour. Stir it occasionally.
  • Remove from oven and add 3/4 cup brown sugar stirring until melted together.
  • Put half of mixture in 9x13" baking pan then slice a half gallon of ice cream and lay slices on top of mixture. Top with remaining crispy topping and freeze. Cut in to bars.
