Crispy Lemon Chicken
3 chicken breast
2 cups plain bread crumbs
1 tbsp lemon pepper (more to taste)
salt and pepper
oil for frying
Heat enough oil in pan to cover bottom. Preheat oven to 350 degrees.
I used a nonstick skillet.
Beat egg in bowl, set aside.
On a paper plate, mix bread crumbs and lemon pepper seasoning.
Add more seasoning if it doens't smell real lemony. I just eyeballed it, once I could see speckles of the pepper, I didn't add any more.
Dip chicken in egg then in bread crumbs.
Press to coat, making sure the chicken is very evenly coated.
Add to pan and dont touch them!
Let them cook on one side about 5-7 minute on medium heat.
Flip and allow to cook for another 5 minutes or so.
Transfer to a greased cookie sheet and bake about 20 more minutes in the oven.
Once done, I let cool about 5 minutes and sprinkled a little more lemon pepper seasoning on them.
They were very juicy! We served it with rice pilaf and corn.
