Crispy Potato Skins
2 Baking potatoes
2 Tablespoon canola oil
2 Ounces cheddar cheese
Salt and pepper to taste
Preheat oven to 450 degree F. Slice potatoes in half and hollow out leaving 1/4 inches of meat next to skins. Save the rest of the potato for another recipe. Set skins on a cookie sheet and brush with oil, salt and pepper. Bake 15-18 minutes until brown. Remove from oven and sprinkle with cheese.
Pairs Well With
I just love baked potatos and I purposely leave some potato on the skins to make these for snacking on later.
