CRISPY SMASHED POTATOES WITH ROSEMARY

Ingredients

  • Red potatoes
  • Kosher Salt
  • Rosemary
  • Pepper
  • Olive oil

Directions

  • Wash and boil potatoes until fork tender (can do ahead)
  • Cool in refrigerator
  • Line baking sheet with foil and parchment paper
  • Flatten potatoes onto parchment lined baking sheet - lay towel on potato and use heel of hand to flatten
  • Liberaly pour olive oil over potatoes and using spatula lift potatoes to let oil get under potatoes
  • Sprinkle with salt, rosemary and pepper
  • Bake at 450 for 30-45 minutes turning once
