Crock Pot Chicken Tortilla Soup
1.5 cups cooked chicken (I was lazy and used a chicken from Costco)
3 cups of chicken broth
1/2 of a red onion, diced
1 cup frozen sweet white corn
1 can of black beans, rinsed and drained
2 green onions, diced
28 oz can of diced tomatoes (with the juice)
1 green bell pepper, diced
1 yellow bell pepper, diced
4 cloves of garlic, minced
3 tbsp. of tomato paste
1/4 tsp. of crushed red pepper
1/2 tsp. of cayenne pepper
1 tsp. cumin
sour cream (optional, garnish)
cheese (optional, garnish)
avocado (optional, garnish)
fresh cilantro (optional, garnish)
Put everything into the Crockpot and stir.
Let cook on low for 8-10 hours or on high for about 6 hours.
Garnish as you wish.
