Crockpot Tostado Pie
1 olive oil
1 onion; chopped
1 lb. browned ground beef
1 tsp. Mexican seasoning
1/2 tsp. salt
2 cloves garlic; minced
8 oz. tomato sauce
4 corn tortillas
2 Tbsp. butter; softened
1 1/2 cups Monterey Jack cheese; shredded
Saute onion in oil until golden. Add ground beef, seasonings, tomato sauce. Cover and simmer over low heat for 30 minutes.
Place a square of foil in bottom of crock pot. Lightly butter one side of tortillas. Lay one tortilla, buttered side up, on
foil. Spread with layer of meat sauce and layer of cheese. Cover with another tortilla, more meat sauce and cheese.
Repeat layers ending with cheese.
Cover and cook on HIGH for 1 hour.
When ready to serve, lift from crockpot by foil
corners. Cut into wedges and serve with sour cream and chopped green onions if desired.

Wedges of cheese tortillas in spicy meat sauce.
