Crockpot Vegetable Pasta

Ingredients

2 Tbsp Butter
1 Zucchini, Sliced
1 Yellow Squash, Sliced
2 Carrots, Sliced
10 oz Frozen Broccoli
4 Green Onions, Diced
1 Garlic Clove, Minced
1/2 tsp Salt, Black Pepper, And Basil
1 cup Parmesan, Grated
12 oz Angel Hair Pasta
1 cup Mozzarella, Grated
1 cup Cream
2 Egg Yolks
(Tomato Sauce Instead Of Cream And Eggs Can Be Substituted)


*Rub crockpot wall with butter; put all ingredients in up to parmesan cheese


*Cook on high 2 hours


*Cook pasta as directed on package and drain


*Add pasta, mozzarella, cream, and egg yolks (or tomato sauce); stir to blend


*Allow to heat 15-30 minutes


*Turn to low and serve with parmesan cheese



Recipe Tips


*Skipping the cream and egg yolks and using tomato sauce - you can still add the mozzarella cheese to make a cheesier version and ends up being a combination of a cheesy-cream sauce and tomato sauce
