Why I Love This Recipe


Ingredients You'll Need

Crust:
1-1/3 cups graham cracker crumbs
1/4 cup sugar
1/4 cup butter or margarine
Cheesecake:
2 pkgs. (8 oz. each) cream cheese, softened
4 eggs, separated
1 cup sugar
1 teaspoon vanilla
1 tablespoon lemon juice
Topping:
1 pint full-fat sour cream
1 teaspoon vanilla
1 cup sugar


Directions

Crust: Mix together, spread in glass 9x13-in. casserole dish and bake at 350ºF for 10 minutes. Remove and set aside


Cheesecake: Cream the cheese, sugar, and egg yolks. (in fact, beat them to death!) Beat egg whites until stiff and glossy. Fold whites into cheese mixture (this is what poofs the cake up) Pour over crust in pan and bake 350ºF for approximately 20-30 minutes (or until set). Remove and cool for next step (but keep oven on).


Topping: Combine topping ingredients and pour over the cheesecake. Put back in oven and bake 350ºF for 5 more minutes.


Keep refrigerated a few hours before serving.
