Crumb Topped Fish
1 lb. fish fillets, cod, haddock, boston blue, etc.
2 tbsp. dry bread crumbs
1 tbsp. grated Parmesan cheese
1 tsp. basil
1/2 tsp. grated lemon rind
2 tsp. olive oil
Pat fish dry on paper towels; arrange in a single layer (skin side down if fish has skin) on lightly oiled baking sheet.
In a small bowl combine crumbs, Parmesan, basil, lemon rind and pepper.
Top each fillet evenly with bread crumb mixture.
Drizzle each fillet evenly with olive oil.
Bake in a 450 degree oven for 8 minutes, until fish flakes easily with a fork and topping is lightly browned
