Ingredients

  • 3/4 cup chopped cooked chicken
  • 1/2 medium apple, chopped
  • 2 tablespoons celery
  • 2 tablespoons light mayonnaise
  • 1 tablespoon sugar-free apricot preserves
  • 1 whole wheat pita bread, cut in half

Directions

  • For 1 or 2 Sandwiches
  • Mix all ingredients, except pita, until well blended. Cover.
  • Refrigerate at least 1 hour.
  • Fill pita halves with chicken salad.
