This classic salad is made even more glamourous and evocative by adding a few changes. We used fennel in place of celery and switched to the champagne grapes. Then we spiked the seasoning with some chipotle powder. Finally we made the mayonnaise a mellow citrus blend by adding some fresh orange juice. All together it makes a dazzling appearence in our best Baccarat bowl. We like to serve it with our version of Chicken Oskar


  • Ingredients:
  • 1/2 Cup toasted walnuts chopped
  • 1/2 Cup fennel finely sliced
  • 1/4 cup red onion sliced thin
  • 1/2 cup red seedless or
  • champagne grapes
  • 1/4 cup golden raisins
  • (plumped in heated brandy)
  • 1 sweet apple cored and
  • chopped with skin on
  • 3 Tbls. Mayonnaise
  • 1 Tbls. fresh orange juice
  • Chipotle pepper powdered or
  • spicy hot paprika.
  • Salt & Pepper


  • In a medium size bowl, wisk together the
  • mayonnaise and orange juice. Add the chipotle,
  • 1/2 teaspoon of salt & 1/4 teaspoon fresh
  • ground pepper. Mix in the apple, fennel, onion
  • grapes and walnuts. Serve on a bed of bib
  • lettuce leaves.
