CRUSTED IRISH POTATOES

Ingredients

  • 2 cans whole Irish potatoes (might be called new potatoes)
  • 1/2 sleeve of Ritz-type crackers, crushed fine
  • 1/2 tsp rosemary, crushed
  • 1/2 tsp tarragon

Directions

  • 2 cans whole Irish potatoes (might be called new potatoes)
  • 1/2 sleeve of Ritz-type crackers, crushed fine
  • 1/2 tsp rosemary, crushed
  • 1/2 tsp tarragon
  • Mix cracker crumbs and spices. Roll potatoes in mixture. Bake at 350ºF for about 20 minutes. You may want to turn on the broiler for a few minutes to brown the potatoes.
  • Serves 4 - 6
  • Just something I put together for tonight's dinner. They were good.
