Cucumber And Potato Soup

Ingredients

1 medium cucumber
4 medium potatoes, peeled and diced
1 teaspoon salt
2 cups cold water
1/4 teaspoon white pepper
1 cup heavy cream
1/2 cup milk
1 green onion, grated
1 teaspoon dried dill weed
or 1 tablespoon fresh chopped dill


Peel the cucumber and slice it lengthwise. Scoop out seeds with a spoon and discard. Dice cucumber. In a heavy 2 1/2-quart saucepan boil potatoes in salted water until the potatoes are very soft. Pour potatoes and cooking liquid into a sieve or food mill set over a large bowl. Force potatoes through. Return to the saucepan. Stir in pepper, cream, milk, grated onion and the cucumber. Simmer gently about 5 minutes or until the cucumber is tender. Add dill and season to taste. Serve hot.


Kay says: The only thing I did different was to finely chop the green onion rather than grating it. I thought the green onion tops were very pretty in this soup along with the dill weed. AND, I just liked the idea of the texture of the onions, too!

Here's the 'other' cucumber soup ! This one came from a friend over on TOH Recipes. I thought he'd made it, only to find out he had posted it but just never actually got around to trying it!! I told him to wait no longer and whip up a potful!! I wonder if he ever did? :O)

Oh My Gosh!!! I was blown away by how good this soup is!!! You really MUST try this!! I think I can almost guarantee you're in for a delightful surprise. It is quite different than my recipe. Now my only problem is going to be trying to decide which of the two recipes I want to make!!!
