Cucumber Mint Yoghurt Dip
1/2 cup sliced and finely chopped cucumbers
1 tbsp finely chopped fresh mint, or 1/2 tbsp dried mint
splash of white wine vinegar
1 cup plain nonfat yoghurt
Sliced veggies (I like carrots, celery, broccoli, cauliflower, and more cukes!)
Combine all ingredients in a small bowl, or even in the yoghurt containers itself. Serve with sliced veggies of your choice. The dip will hold for up to one week store in an airtight container.
