Cucumber Noodles

Serves 4 | Prep Time 5 minutes | Cook Time 5 minutes

Ingredients

3 English cucumbers
2 tablespoons butter
2 tablespoons minced mint
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon lemon zest
1 teaspoon lemon juice


Cut cucumbers into 1/8 inch strips, discarding core; slice strips into 1/8 inch noodles. Blanch in boiling salted water 1 minute; transfer to ice bath for 2 minutes. Drain and pat dry.


Meanwhile, heat butter until foam subsides; add cucumbers, mint, salt, pepper, lemon zest and lemon juice and toss 1 minute. Serve immediately.

Cooking cucumbers takes them out of the salad realm, transforming them into a side dish that's perfect with fish or white meat. Perked up with mint and lemon, they're as refreshing as ever.
