CUCUMBER QUICK BREAD

Ingredients

  • 3 eggs
  • 2 C sugar
  • 2 C grated, seeded, & peeled cucumbers
  • 1 C veggie oil1
  • 1/2 ts vanilla extract
  • 3 C all purpose flour
  • 1 C chopped nuts1
  • 1/2 ts ground cinnamon
  • 1 ts baking soda1 ts salt
  • 1/4 ts baking powder

Directions

  • In a mixing bowl, beat eggs. Beat in sugar, cukes, oil & vanilla until well blended. Combine the remaining ingredients; add to cuke mix & beat just until combined. Pour into 2 greased 9" x5" x3" loaf pans. Bake at 350 F for 60-65 minutes. or until a toothpick inserted near the center comes out clean. Cool 10 minutes before removing from pans to wire racks.Yields 2 loaves.
