Cucumber Shiso Salad

Serves 2 | Prep Time 10 minutes | Cook Time 5 minutes

Ingredients

1/2 cucumber, sliced
1-1/2 tablespoon sugar
1-1/2 teaspoon kosher salt
1 tablespoon rice wine vinegar
3 thinly sliced scallions
3 chiffonaded shiso leaves


Combine cucumber with sugar, salt and vinegar; let sit 10 minutes. Drain off any liquid. This salad may be kept up to several hours in the fridge before losing crispness. Toss with scallions and shiso leaves right before serving.
