Cucumbers in Cream
2 lg. cucumbers
Small container heavy whipping cream
2 T. vinegar
Pepper to taste
Sugar to taste
Peel and slice cucumbers very thin. Cover with salt (about 1/2 tsp.), mix and let stand for at least an hour. Squeeze cucumber slices to drain. Place in serving bowl and add vinegar, cream pepper and sugar (should have a sweet/sour taste). Mix thoroughly. Chill until ready to serve.
Pairs Well With
Really great served oer mashed potatoes, but an excellent side-dish for the not so adventurous.
