Curried Brown Rice Pilaf
1 cup brown rice
1/2 cup thin spaghetti
1/4 cup sliced almonds
1/4 cup raisins
1/4 cup scallions
4 Tbl light butter
Cook rice in salted boiling water for 30 minutes. Drain water and set rice aside.
While rice is cooking, break spaghetti into very small pieces and cook in boiling water till al dente. Drain water.
Melt the butter in the same pot you used to cook the rice. Once it's melted, add the spaghetti, almonds, raisins, curry powder, salt and pepper. Cook for about 3 minutes.
Remove from heat, and mix in the rice and scallions.

I got this recipe idea from the new Food Network Magazine. I made a few tweaks for ease and calories sake, but this is amazing!! I'm probably going to add some chicken next time and see how it works out.
