CURRIED CRAB QUICHE

Ingredients

  • 1 pie crust
  • Filling:
  • 1 pound crab or crawfish
  • 2 tablespoons lemon juice
  • 2 tablespoons sherry
  • 1 tablespoon chopped onions (finely)
  • 1 teaspoon curry powder
  • 1 teaspoon parsley flakes
  • 1 cup cubed swiss cheese
  • Wet Ingredients:
  • 3 eggs well beaten
  • 3/4 c.milk
  • 1/2 cup sour cream
  • 1/4 teaspoon salt

Directions

  • Mix together wet ingredients pour over the filling in a pie crust. Bake on 350 degrees F for 45 minutes or until light brown and set. Cool slightly and cut into wedges
