Curried Lentils and Vegetables

Ingredients

1 3/4 cups water
3/4 cup lentils, rinsed and drained
1/2 cup chopped carrots
1/2 cup chopped onion
1/3 cup chopped celery
2 tsp. curry powder
1/2 tsp. grated fresh ginger
1/8 tsp. ground ginger
1 small clove garlic, minced
1/4 tsp. salt
1/2 cup plain low-fat yogurt
1/2 cup chopped tomato
1 tbsp. snipped fresh parsley or cilantro


IN a medium saucepan combine water, lentils, carrot, onion, celery, curry powder, ginger, garlic and salt. Bring to a boil; reduce heat. Simmer ,covered, for 20 to 25 minutes or until lentils are tender and liquid is absorbed. In a small bowl, stir together yogurt, tomato, and parsley. Serve with the lentil mixture. Makes 2 servings.
