Curried Plantains - from the U.S. Virgin Islands
4 ripe plantains
1 cup flour
1 tablespoon curry powder
11/2 cup bread crumbs
vegetable shortening or lard for frying
salt and pepper to taste
Peel plantains and cut into quarters. Roll in flour seasoned with salt, pepper and curry powder. Dipp in beaten eggs, then bread crumbs. Fry in deep fat until golden brown.
