CURRY CHICKEN

Ingredients

  • 1 pack of boneless thighs (boneless chicken breast) thighs have better flavor
  • 1 large onion
  • 4-5 small potatoes
  • Garlic powder
  • 1-2 cloves of garlic
  • 2 tablespoons of flour
  • McCormick Red Curry seasoning Or Island Spicy Curry
  • Cumin
  • 1-2 tablespoon of Salt or to taste
  • Vegetable oil

Directions

  • Cut boneless thighs (breast) in half or slightly small pieces
  • Season with Curry, Garlic powder generously 3-4 tablespoon
  • Season with Cumin about ½ - 1 tablespoon
  • Marinate for 30min – 2 hours
  • Cut onions into strips
  • Cut potatoes in half or quarters if using larger potatoes
  • In a large pot coat bottom of pan with vegetable oil
  • Brown chicken set aside until all pieces are browned
  • Brown onions & Garlic cloves
  • Add cut potatoes
  • Cook until onions start to appear translucent
  • Add 2 tablespoons of flour cook a few minutes to cook out the flour taste
  • Add Brown chicken back in
  • Add 1-2 additional tablespoon of curry
  • Add salt 1-2 tables of salt
  • Add 1 -2 cups of water
  • Let simmer until potatoes are soft usually 20minutes or so
  • Serve over White Rice
