CUSTARD PIE

Custard Pie

INGREDIENTS

  • 4 eggs
  • 2/3 cup sugar
  • ½ tsp salt
  • 1/4 tsp nutmeg
  • 2-2/3 cups milk
  • (Or 1 pint half & half + ½ cup whole milk)
  • 1 tsp vanilla

DIRECTIONS

Heat oven to 450.


Beat eggs slightly, beat in remaining ingredients, pour into pastry lined pie tin. Bake 20 minutes


Reduce temp to 350. Bake pie 15-20 minutes longer.


Pie Crust for 2 pies : divide in half & wrap other half carefully & freeze


2 1/2 cups flour


1/2 teaspoon salt


1 cup shortening


1 large egg


1/4 cup cold water


Alternate Method: Pour filling into ungreased pie pan. Set pan in shallow pan filled with water. Bake at 350 for 65 minutes. Cool to lukewarm. Meanwhile, make baked pie shell.


Loosen custard around edge of pan with spatula, shake gently to loosen completely.


Slip custard into baked pie shell and let settle a few minutes before serving
