DIY CREAM OF MUSHROOM SOUP

  • Preparation Time: 10 minutes

Ingredients

  • 3 Tbls. butter
  • 2 c. chopped onion
  • 9 c. sliced mushrooms, divided in half
  • 4 c. vegetable broth
  • 1/4 tsp. pepper
  • 3 tsp. dill
  • 4 c. milk
  • 1/2 c. whipping cream

Directions

  • Melt butter in a large skillet
  • Add onion and mushroom and cook until tender
  • Add broth, pepper, and dill
  • Bring to a boil, reduce heat and simmer, covered, for 15 minutes
  • Puree in small amounts in a blender, return to pan
  • Add remaining mushrooms and return to a boil
  • Reduce heat and simmer, covered, 10 minutes
  • Stir in milk and cream and stir until warmed through
